Homemade head cheese

Men will surely appreciate it when you prepare homemade head cheese for them. You will buy pork hocks, legs, head, tongue, and liver from your butcher. Alternatively, you can choose a different combination of meats. The butcher will certainly advise you.
Ingredients (what you need)
2 kg pork head
1 kg pork tongue
0.5 kg pork liver
500 ml broth
1.5 kg pork knee
1 pc kitchen onion
garlic
marjoram
allspice - ground
salt
black pepper - ground
allspice - ground
piece of lard
Recipe steps
We will prepare large pots or a pressure cooker and get started.
We will properly clean the feet, head, and knees. Remove any hairs if necessary. The unseasoned liver will be boiled separately in another pot. The rest of the meat will be boiled for a very long time. You need to keep an eye on it. The meat must be soft but not completely.
Then we will drain the broth from the meat and set it aside. We will remove the fat from the broth.
Next, we will cut the liver into small pieces, peel the tongue and also cut it. We will remove the meat from the bones and chop it. The skin can be either minced or cut into tiny pieces.
We take a huge pot and sauté the onion in lard. We add all the meat, skin, and liver. We pour in the meat broth and season it. We add garlic to taste. We warm it up slightly and set it aside, where we have already prepared the sausage casing.
We fill it, tie both ends, and tie it again in the middle of the casing.
We place the filled sausage casings into boiling water and boil for about 1.5 to 2 hours.
Then we take them out, prick to release air, and let cool. During cooling, we turn them variously to adjust the shape.
Finally, we let it rest in the refrigerator overnight.
The next day, we cut the onion and the sausage on a cutting board. We drizzle with vinegar and serve with fresh bread. Yum, and enjoy your meal.
