Potatoes filled with egg mixture

Under running water, we wash the potatoes with a brush, cut them in half lengthwise, salt them, and brush them with olive oil on all sides. We then place them in a baking dish, cut side down. We put them in a preheated oven at 180°C and bake until golden. Once we take them out of the oven, we let them cool and scoop out the insides, leaving about 1/5 around the edges.

We take crushed garlic, finely chopped chives, and mix them with yogurt, mayonnaise, salt, and pepper. We then add the potato mixture and place it in the refrigerator to chill for half an hour.
We then fill the hollowed-out potatoes with the mixture, garnishing with a slice of tomato and chives.
