Cream sauce with marinated beef

Svíčková is usually considered a complex dish; however, its preparation mainly requires time. This excellent Czech sauce has a number of variations and options.
Ingredients (what you need)
600 g beef tenderloin
50 g smoked bacon
salt
ground pepper
40 g fat
1 onion
80 g carrot
50 g parsley
50 g celery
meat broth
1 bay leaf
2 allspice berries
40 g all-purpose flour
250 ml sour cream
sugar (to taste)
lemon juice (to taste)
Recipe steps
Peel the onion and chop it into small pieces. Wash the vegetables and cut them.
Remove the membranes from the sautéed tenderloin, fill it with pieces of smoked bacon, season with salt and pepper, and sauté it in hot fat on all sides. Finally, set it aside in a warm place.
Sauté the onion in a pan, then add the vegetables, briefly sauté them, and then add meat broth.
Finally, add the sautéed meat, bay leaf, and whole allspice, cover, and let it bake in a preheated oven until the meat is tender.
Remove the tender meat, thicken the juice with flour, and cook it for about 20 minutes more.
Strain the sauce, add cream, sweeten, and acidify with lemon juice to taste. For better color, you can mix in caramelized sugar.
Slice the meat and serve it with bread dumplings, lemon, and cranberries.
