Coffee muffins
Dissolve instant coffee in a quarter liter of water. Whip together butter, egg yolks, powdered sugar, and vanilla sugar. Then mix in the chilled coffee and flour.
Ingredients (what you need)
4 teaspoons of instant coffee
250 g of butter
500 g of powdered sugar
1 packet of vanilla sugar
4 eggs
375 g of all-purpose flour
1 teaspoon of baking powder
2 tablespoons of cocoa
Recipe steps
Dissolve instant coffee in a quarter liter of water.
Whip the butter, egg yolks, powdered sugar, and vanilla sugar. Then add the cooled coffee, flour mixed with baking powder and cocoa.
Fold in the beaten egg whites and fill the paper cups about three-quarters full. Then bake at approximately 180°C, which took me about 30-35 minutes. You can sprinkle with sugar to taste.
I believe they would also be delicious with a chocolate filling. You can put a little batter in the bottom of the mold, place a piece of chocolate or a teaspoon of Nutella on top, and then fill with batter up to three-quarters of the cup. I haven't tried that yet, though.
