Christmas bread with cottage cheese and cream without fermentation

If you can't dedicate time to prepare a yeast-raised Christmas brioche, but would still like to offer it to your family during the festive evening, try baking a no-rise brioche with cottage cheese and cream.
Ingredients (what you need)
Dough
300 g all-purpose flour
300 g semi-coarse flour
150 g powdered sugar
3 eggs
150 g butter (or margarine)
250 g semi-skimmed or full-fat cottage cheese (in a tub)
1 vanilla sugar
1 baking powder
orange zest (to taste)
raisins soaked in rum (to taste)
3 tablespoons milk
2 tablespoons whipping cream 31-33 %
1 pinch of salt
For finishing
1 egg for brushing
1 handful of almond slices
Recipe steps
On the worktop, we pour the flour, add the remaining ingredients, and knead the dough until it does not stick. If the dough is sticky, we add a little more flour, but it is important that it starts to crumble.
We divide the dough into nine equal parts. The first layer is braided from four thin strands of rolled pieces, starting with the outer strand and alternating it until we reach the second edge. We continue this way until we reach the end, which we then tuck under the loaf. We place it on a baking sheet and make a groove in the center with our hand.
For the next layer, we create a braid from 3 strands like a braid, place it on the bottom layer, and again make a groove with our hand.
For the last layer, we use two strands. This layer needs to be longer because it will be placed on top, but we have to hide the ends of the strands under the whole loaf.
Then we brush the loaf with beaten egg and sprinkle it with almond flakes. We bake it at a temperature of 150-160 °C for about 45-50 minutes.
