Ingredients (what you need)

Starter for the dough
80 g milk
80 g water
30 g all-purpose flour
Dough
90 g butter (or half with HERA)
170 g milk
2 eggs
10 g dried yeast (or 22 g fresh)
500 g all-purpose flour
30 g powdered milk
1/2-1 teaspoon salt
Filling
250 g sugar
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground cloves
150 g butter
Sauce
120 g powdered sugar
60 g cream cheese (Lučina, Philadelphia)
60 g butter
1/2 teaspoon vanilla extract
20 g milk
1 tablespoon lemon juice
Additionally
flour and fat for preparing the pan

Recipe steps

We prepare the ingredients for the starter porridge by boiling them for 3 minutes at 80 °C at speed 3. Then we let it rest and cool for about 10 minutes.

In a blender, we add milk, eggs, butter, and yeast and blend for 20 seconds at speed 4. Then we add the remaining ingredients for the dough and process for 3–4 minutes on the Dough program. The dough should be elastic, smooth, and slightly sticky. If needed, we add one to two tablespoons of plain flour. We let it rise for about 45 minutes in a bowl. The dough can also be prepared the night before and left to rise in the refrigerator (or on the balcony) and baked fresh in the morning.

Meanwhile, we prepare the filling by placing all the ingredients in a blender and processing them into a smooth paste at speed 4 for 30 seconds.

We place the risen dough on an oiled work surface. We gently roll it out into a sheet about 1 cm thick and measuring 50 × 30 cm. Then we spread the prepared paste on it and roll it up from the longer side into a log. We cut individual pieces from this log (it is best done using unscented dental floss) and place them on a greased and floured baking sheet. We leave gaps between the pieces, as they will rise a lot. We let them rise until the volume of the rolls doubles.

We bake in a preheated oven at 180 °C for 20 minutes.

We prepare the sauce by mixing all the necessary ingredients at high speed for 30 seconds. Depending on the type of cheese, it may not have a completely smooth consistency, but it does not detract from the taste.

We serve warm, drizzled with vanilla sauce.
