250 g spelt flour
100 g plain soy flour
1 pinch of salt
1 sachet of dried yeast
200 ml lukewarm milk
2 egg yolks
5 tablespoons of oil
50 g sugar
grated lemon zest

50 g butter (as needed)

Recipe steps
From the ingredients, we prepare the dough and let it rise for about an hour.
We sprinkle the rolled-out dough with ground cinnamon, sugar, a small amount of grated butter, and chopped nuts.
We roll up the strudel, brush it with egg, and cut it into pieces about 5 cm thick. We place them on a baking sheet lined with baking paper. We bake at 180 °C for about 30 minutes.
