Chicken thighs with vegetable sauce

We coat the chicken meat with a mixture of smoked paprika and turmeric. Then we add oil, coarse salt, mustard, and dried bay leaf, and thoroughly rub everything into the meat.

2 large chicken thighs
1 bag of frozen vegetables (peas, carrots, celery)
butter
coarse sea salt
ground, fine bay leaf
mustard
oil
2 shallots
1 sour cream
turmeric
smoked paprika
broth or water for steaming
Recipe steps
Sprinkle the chicken with a mixture of smoked paprika and turmeric. Add oil, coarse salt, mustard, and ground bay leaf, and rub everything thoroughly into the meat. Let it marinate overnight in the refrigerator. The following day, in a deep oven-safe dish, sauté the chopped shallots in heated oil, then add the marinated chicken, browning it on both sides, and then place the entire dish in the preheated oven.
Bake at a temperature of 180 degrees and baste with chicken broth. Once the meat is lightly browned, add all the vegetables, gently mix with the drippings, and bake until golden. Once the meat is done, remove it and keep it warm. Set aside half of the vegetables.
Blend part of the drippings with the second half of the vegetables. Mix sour cream with a few tablespoons of broth, add flour, and pour everything into the blended sauce, which we continue to cook for about 12 minutes. Gently stir in the remaining vegetables that were not blended. Lightly enrich the sauce with butter. Serve it with the meat and potato dumplings.
