100 g smoked bacon
1 large onion

Grate the celery on a coarse grater and drizzle with lemon juice. Add a little water so that the celery is not completely submerged. Season with salt and add caraway seeds. Boil for 8 to 10 minutes.
Meanwhile, chop the onion and the pork belly into small cubes. If the pork belly is too lean, add a bit of lard and let it melt. Then add the onion and fry it until golden.
Sprinkle in the flour and prepare a roux.
Add the roux to the celery and let it cook. Season it as you would typically season cabbage, with sugar and vinegar to taste.
