Cauliflower steaks

We cook the cauliflower in salted water. To the hot cauliflower, we add grated Emmental cheese, ham, yolks, and chopped parsley, and we thoroughly mash everything together. Finally, we fold in the beaten egg whites.

hard cheese
parsley leaves
diced ham salami or cooked smoked meat
3 egg yolks
whipped egg whites
a pinch of salt
breadcrumbs
Recipe steps
Boil the cauliflower in salted water. Mix grated Emmental cheese, ham, egg yolks, and parsley into the hot cauliflower, and mash everything thoroughly.
Combine the egg white foam with salt and gently thicken with breadcrumbs. Then, scoop the mixture with a spoon and carefully coat it in breadcrumbs.
Place in heated fat (lard, oil... to taste) and gently press down to form a thicker patty. Fry until golden brown.
