Beef roll in carrot

We thoroughly wash the meat, dry it, remove any membranes, and cut it into cubes. We finely chop the onion and sauté it in butter together with olive oil.
Ingredients (what you need)
800 g lean beef (preferably a joint)
3 larger onions
2 tablespoons butter
2 tablespoons olive oil
3 teaspoons tomato paste
approximately 1 l beef broth (or 2 cubes of gel beef bouillon - I use Knorr)
400 g frozen mini carrots (I used Nowaco)
2 bay leaves
salt
pepper
2-3 tablespoons oatmeal (depending on how thick one likes the sauce)
150 ml cooking cream 12%
water as needed
Recipe steps
We wash the meat and dry it, then remove any membranes and cut it into cubes. We finely chop the onion and sauté it in butter with olive oil until it turns golden brown. We add the meat and let it brown, then stir in the tomato paste, bay leaves, and season lightly with salt and pepper. We pour in broth or water (if using water, we add bouillons and salt carefully) and let it simmer under a lid for about 90 minutes. About 75 minutes into the cooking, we can add the frozen mini carrots.
We pour cream over the flakes and let them soften for about 15 minutes, then we blend them with an immersion blender until smooth. If the mixture is too thick, we can thin it with cream or water. About 5 minutes before the end of cooking, we add the mixture to the pot with the sauce, carrots, and meat, and let it simmer a little longer. The sauce will thicken nicely even without flour and is ready to be served.
A great side dish is rice or potatoes prepared as mashed or boiled. The photo shows mashed potatoes with butter and parsley.
