Ingredients (what you need)

Dough
200 g all-purpose flour (as needed)
200 g semi-coarse flour (as needed)
25 g fresh yeast
40 g granulated sugar
250 ml milk
30 g butter
2 eggs
1 pinch of salt
4 tablespoons rum
oil for frying
For the topping
jam
500 g tub-style cottage cheese
3-4 vanilla sugars

Recipe steps

Into the robot's bowl, we sift plain and semi-coarse flour. In the middle of the flour, we create a well, into which we crumble the yeast. We sprinkle the yeast with a pinch of sugar, pour in a little lukewarm milk, and cover it with flour. We cover the bowl with a cloth and let it rise in a warm place for about 15 minutes.

After the starter has risen, we add salt, the remaining sugar, melted butter, the rest of the lukewarm milk, eggs, and rum to the bowl, and mix the dough using the robot. If the dough is too runny, we add a little more flour and knead it into a smooth dough, which we finally sprinkle with flour. We cover the bowl with a cloth and let the dough rise for about 30 minutes in a warm place.

We transfer the risen dough to a floured work surface and knead it again. Then, we roll it out into a sheet about 2 cm thick and cut out circles. We let them rise for another 10 minutes and make a small indentation in one side.

We fry the doughnuts in hot oil in a pot until they are golden brown on both sides. First, we place them in the oil hole side down, and then we turn them over. After frying, we let them drain on a cloth.

We mix the cottage cheese with vanilla sugar using a hand mixer.

We decorate the doughnuts with jam and flavored cottage cheese.
