Ingredients (what you need)
3 young zucchinis (500 g)
6 eggs
60 g cooked ham
30 g Parmesan cheese
10 g fresh basil
100 ml milk
3 tablespoons olive oil
salt to taste
Recipe steps
Washed zucchinis are cut into coarse pieces. In a non-stick pan, heat the oil and sauté them on low heat until they soften.
Grate the Parmesan. Cut the ham into small cubes. Tear the basil leaves into smaller pieces.
In a bowl, whisk the eggs, then add the Parmesan, ham, basil, milk, and salt to taste.
Pour the egg mixture onto the pan with the soft zucchinis. Cover it with a lid and let the omelet set over low heat.
Flip the omelet onto a plate and briefly set it on the other side as well. Serve immediately.
