Ingredients (what you need)
1 egg white
10 tablespoons powdered sugar (lightly heaped)
1 teaspoon lemon juice
1 teaspoon potato starch
Recipe steps
Whisk the eggs in a bowl and remove the "strings" from them. Sift the sugar through a very fine sieve, add the lemon, and beat at the highest speed until the egg whites thicken.
Next, sift the starch into the mixture and stir thoroughly until a firm mass is formed. If we have a larger egg white, we add sugar; if the mixture is too thick, we add lemon juice. The properly thick icing should hold peaks on the beaters and should not run off.
For decorating, it is best to use plastic bags. To make filling the icing easier, we place the bag in a taller container and fill it. If we want to color the icing, just add color to the bag, close it, and mix with our hand.
First, we prepare the bag by cutting a slit in the corner with scissors. If we are painting larger areas, we first outline the shape, let it dry slightly, and then fill in the center.
If we have leftover icing, we put it back in the bag, then place it in a taller container and store it in a cool place.
