First, we prepare the brine by boiling water with vinegar. During the boiling process, we add salt, sugar, bay leaf, chili, pepper, allspice, and oil. We let it simmer for about 3 minutes. We remove it from the heat and allow the brine to cool down.

Ingredients (what you need)

2 kg sausage
120 g salt
bay leaf
1.75 kg onion
1 tablespoon oil
1250 ml water
600 ml vinegar
10 g sugar
chilli
20 pieces pepper
5 pieces allspice

Recipe steps

Peel the sausages and cut them lengthwise into quarters. Peel the onion and slice it into rings. In a large glass jar, pack the onion at the bottom to a height of about 1 centimeter. On top of that, arrange the sausages and repeat until the jar is filled.

Continuously pour the brine over to avoid air bubbles until the jar is full.

Seal well with a lid (cover with cellophane and secure with a rubber band) and it can be stored. Minimum 1 week.
