The recipe for tomato soup with beans is worth trying, in our opinion.
Ingredients (what you need)
30 g butter
1 pc onion
2 cloves garlic
1 pc carrot
1 and 1/2 tbsp herbs (oregano, basil, thyme)
170 g tomato puree
125 ml dry white wine
425 g (1 can) white beans (canned, drained)
1 l chicken broth
50 g grated Parmesan cheese
120 g baby spinach
185 ml whipping cream (optional)
salt
pepper (freshly ground)
Recipe steps
First, heat the butter in a proper pot. Then add the finely chopped onion, garlic, and carrot. Sauté for about 5 minutes, until the carrot softens a bit. About halfway through those 5 minutes, sprinkle in the herbs so that the kitchen, and especially the tomato soup, fills with a beautiful aroma.
Slightly increase the heat and add the tomato paste. Sauté it for approximately 2 minutes to fully develop its strong flavor. Then pour in the wine and let it evaporate, which should take about 3 minutes.
Now add the beans (about 1 cup), but not all of them; set some aside for finishing the soup. Together with the beans, add the broth, Parmesan, and season with salt and pepper. Continuously taste the tomato soup, as the beans (their liquid) and broth can be salty on their own. Stir and simmer covered for about 3 minutes. Blend everything with an immersion blender.
Finally, into the nearly finished tomato soup with beans, add the remaining beans and spinach leaves. If someone wants a heartier soup, they can add cream. Stir, taste again for seasoning, and serve with bread. Enjoy your meal!
