Ingredients (what you need)
750 g of quality beef back meat
25 g of smoked bacon
1 tablespoon of mustard
2 hard-boiled eggs
salt
ground pepper
150 g of onion
90 g of lard
70 g of all-purpose flour (for thickening)
Recipe steps
Deepen the beef chunk and fill it with strips of bacon, making a slit in the center and spreading mustard on it.
Press both cooked and peeled eggs into the prepared opening in the meat and close the hole with a metal skewer, or we can tie the meat with string. Season with pepper and salt.
Prepare the onion and cut it into larger pieces.
In hot lard in a roasting pan, sauté the chopped onion until it turns lightly pink, then add the meat and brown it on all sides.
Then pour in hot water, cover the roasting pan, and bake in the oven until the meat is tender. During baking, turn the meat and baste it with the released juices. Optionally, add water if necessary.
Remove the tender meat, sauté the juices in fat, sprinkle in flour, briefly roast it, and while continuously stirring with a whisk, add water.
Stir occasionally and simmer for about 25 minutes. Finally, strain the sauce.
Cut the meat into pieces and serve with dumplings, topped with sauce.
