1 cup of Brazil nuts
2 tablespoons of cocoa powder
3/4 cup of dates
Chocolate cream
2 small bananas
a handful of cocoa nibs
1 banana
chocolate (recipe on the website, link below)
1 avocado
2 tablespoons of melted cocoa butter
Raspberry topping
1 cup of raspberries (fresh or frozen)
3 teaspoons of agave (or other sweetener)
Recipe steps
For the nuts, blend them into a fine flour and then mix them with cocoa.
Blend the Medjool dates into a smooth paste (you can add a little water) and mix them with the flour. Form a dough and press it into a 20 cm diameter mold. If the dough is too sticky, add more blended nuts. If it doesn't hold together, simply add a bit of water.
Let it cool in the fridge and start preparing the cream.
Blend all the ingredients except for the cocoa beans and two bananas, and sweeten if necessary. Slice the two bananas and lay them on the dough. Then sprinkle with cocoa beans, the amount is up to your taste, as they will melt in the cream and taste great. Finally, add the chocolate cream and spread it evenly.
Place the whole cake in the freezer to set.
Prepare the raspberry topping by blending the raspberries and adding agave syrup. If someone prefers a sweeter topping, they can add more agave.
Once the cream has firmed up, remove the cake from the freezer and drizzle it with the raspberry topping. Then put it back in the fridge or freezer. Finally, you can decorate the cake with pieces of chocolate and it's ready to serve!
