Potato dumpling stuffed with homemade wine sausage

I make the wine sausage like this: I first put the breadcrumbs in a bowl and pour cooking cream over them to soak them well.
Ingredients (what you need)
4 larger potatoes cooked in their skins
semolina
all-purpose flour
eggs
salt
250 g ground pork
bread crumbs (approximately the same volume as the meat)
cooking cream
dry white wine
nutmeg
a pinch of lemon zest (optional)
Recipe steps
I prepare the wine sausage like this: first, I soak breadcrumbs in cooking cream in a bowl, so they absorb it and have a "mud-like" consistency. Then I wash the meat 2-3 times until it forms a fine paste. After that, I mix the meat with the breadcrumbs. I add a little dry white wine (about half a deciliter, to taste), salt, a pinch of nutmeg, and a pinch of lemon zest (after the first tasting, I don't add it anymore because it is very aromatic).
We will prepare traditional potato dumplings. First, we cook the potatoes in their skins, which we can do a day in advance. Once cooled, we peel them and grate them finely. We add a whole egg, semolina for children, and plain flour in a ratio of 2:1 for a finer consistency, and a little salt. We knead the dough, which we then roll out into a flat shape.
On this flat shape, we spread the mixture of wine sausage. We then roll it up and steam it for about 20-30 minutes, depending on the size of the dumpling.
