Potato boats with cheddar and bacon

This appetizer is an amazing snack.
Ingredients (what you need)
120 g cheddar or another hard cheese
8 pcs potatoes
70 g smoked bacon
20 g butter
for garnish chives or parsley
to taste ground pepper
salt
Recipe steps
Preheat the oven to 200°C.
Wash and dry the potatoes, pierce them with a toothpick, place them on a greased baking tray, and put them in the oven. Bake for at least 1 hour. When we take them out, they should be tender. At that moment, we cut them in half.
Do not turn off the oven.
Using a spoon, scoop out the insides of the potatoes without breaking the skin, leaving about half a centimeter of potato inside. Brush the hollowed-out potatoes with melted butter and put them back in the oven. Leave them there until they turn golden.
Cut the bacon into thin strips and the cheese into small cubes or grate it coarsely.
Salt and pepper the insides of the potatoes and fill them with bacon and cheese. Place them back in the oven and leave them there until the cheese melts.
After removing from the oven, garnish with chopped chives or parsley and serve immediately.
