Pork crackling pancakes

We'll prepare a starter from a tablespoon of plain flour, yeast, sugar, and a third of lukewarm milk. We mix it and let it rise somewhere warm.
Ingredients (what you need)

coarse salt
for brushing egg yolk
dough 1/2 cube yeast
1/2 teaspoon granulated sugar
1 piece egg
150 g cracklings
150 ml milk
salt
250 g all-purpose flour
Recipe steps
We sift the flour, add salt, eggs, ground cracklings, and the rest of the milk. We mix it all together with the risen sourdough and knead the dough. We let it rise like this.
On the board, we shape the patties. We place them on a greased baking sheet and brush them with beaten egg yolk. We sprinkle with salt and cumin and let rise for another 15 minutes.
We place them in the oven at 180°C and bake for approximately 15 minutes, until golden.
They can be served warm or cold.
