Ingredients (what you need)
pork bones
1 onion
1 young spring onion
2-3 tablespoons of coarse flour (as needed)
1 tablespoon of butter
1 egg
1 carrot
a piece of celery
1 parsley
celery leaves
curly parsley
lovage
soup seasoning (optional)
salt
ground pepper
Recipe steps
We put the bones into salted water with a whole onion and simmer them for about 1.5 hours.
We filter the broth, discard the onion, and if there is any meat left on the bones, we remove it and cut it into small pieces.
We slice the onion along with the greens and sauté it in butter, then add the chopped root vegetables and briefly stir-fry everything.
Next, we return it to the soup and let it boil until the vegetables soften. We also add the meat.
From the egg, coarse flour, and a little salt, we prepare a dough, which we then pour into the boiling soup through a fork.
We stir in chopped herbs, season with soup seasoning, and add salt if needed.
We let it boil for a while longer and then we can serve.
