Ingredients (what you need)

350 ml full-fat milk
30 g fresh yeast
50 g lard
250 g cracklings
500 g semi-coarse flour
100 g fine flour
1-2 teaspoons salt (salt depends on the saltiness of the cracklings)
1 teaspoon freshly ground pepper
50 g chopped wild garlic (if you can't find wild garlic, use 25 g chopped parsley)
2 egg yolks
60 g finely grated boiled potatoes
For finishing
1 beaten egg for brushing
3 teaspoons coarse herb salt for sprinkling

Recipe steps

Warm the milk until it reaches a lukewarm temperature, then crumble the yeast into it and stir.

Let the lard soften at room temperature or melt it and allow it to cool. Chop the cracklings finely and the wild garlic coarsely.

In a bowl, combine all the ingredients, add the risen starter, and knead the dough until it is not sticky. If the dough is sticky, add a little more flour.

Form the dough into a round ball and cover it with a towel. Let it rise for 45 to 60 minutes, until the volume of the dough doubles.

Divide the dough into pieces weighing 70 g each and roll each piece into a strip 30 cm long.

Shape them into the form of Judas, place them on a baking sheet lined with baking paper, cover with a towel, and let them rise for 20-30 minutes.

Before baking, brush the Judas with beaten egg and sprinkle with a small amount of herb salt.

Bake for 20 to 30 minutes at 200 °C, until golden brown. Adjust the baking time according to your oven.
