1 salmon fillet (or larger trout)

Grilling mix
2 tablespoons sun-dried tomatoes
8 large cloves of garlic
4 tablespoons chopped parsley
60 ml olive oil
1 teaspoon salt
Recipe steps
We peel the garlic cloves and blend them together with sun-dried tomatoes, parsley, olive oil, and salt. We let the mixture sit in the fridge overnight.
The next day, we make a lengthwise cut in the salmon, but we do not cut through the skin.
We place about half of the grilling mixture into the incision, put a slice of lemon on each portion, and let it rest for a while.
We grill the fish with a lid, either on an oiled grill rack, skin side down. After about 10-15 minutes, we brush it with the remaining grilling mixture and continue grilling until the flesh begins to flake apart with a fork.
The second option is to soak a cedar plank in water for two hours and then grill the fish on it. Grilling with the lid closed creates a pleasant aroma, the fish acquires a delicate flavor, and it won't slip between the grill grates.
We serve it with green beans with nuts, or asparagus with nuts and potato pancakes.
