Ingredients (what you need)
90 g peas
1 pc onion
1 pc carrot
1 dl white wine
250 g chicken breasts
1 l vegetable broth
200 g round-grain rice
for garnish basil
Recipe steps
First, we will prepare vegetable broth. It is definitely better homemade than store-bought, so we will use carrots, onions, celery, stalk celery, parsley, salt, and pepper. If necessary, we will prepare it from bouillon.
In a pan, we will sauté chicken pieces that we have previously salted and seasoned with grill spice. Then we will sauté a medium-sized onion chopped finely and diced carrots. We will fry rice, preferably short-grain, in oil with a piece of butter, oregano, and basil for about 5 minutes. Then we will pour in the wine and let it evaporate slightly. Next, we add a little broth and let it evaporate again.
We repeat the process with the broth until the rice softens. It is necessary to keep stirring the risotto so that it does not stick to the bottom.
5 minutes before the end of cooking, we mix the rice with the sautéed chicken, onion, carrots, and peas.
We sprinkle the Italian chicken risotto on the plate with parmesan and, if desired, we can garnish with basil leaves.
