1 whole stalk of celery
1 carrot
1 large onion
1 larger clove of garlic
1 tablespoon of butter
1 heaping tablespoon of all-purpose flour
about 700 ml of meat broth
100 ml of heavy cream
60-80 g of grated Niva cheese
2 whole allspice berries
salt

Recipe steps
Chop the carrots and celery into smaller pieces, and finely chop the onion and garlic. In a pan, melt the butter and sauté the onion and garlic until soft. Then, add the celery, carrots, salt, and spices, and sauté everything for about five minutes until the celery becomes pleasantly fragrant.
Add the flour and stir for a moment. Pour in the broth so that it covers the celery as well. Stir and cook until the vegetables are soft. Stir occasionally. Blend the soft vegetables (without allspice) until smooth. Adjust the thickness as needed with broth.
Add the cheese to the mixture and, once it has melted, add the cream. Let it simmer for a while. Finally, stir in the finely chopped celery leaves and season the sauce. Serve with boiled potatoes or pasta.
