Cauliflower is truly an exceptional vegetable that contributes to successful weight loss and is rich in valuable nutrients. It also offers many different ways to use it.

Ingredients (what you need)

1 medium cauliflower
1 medium onion
50 g bacon
10 ml oil
1 clove of garlic
6 sun-dried tomatoes in oil
30 g all-purpose flour
20 ml milk
150 g grated cheeses (various kinds, leftovers, Edam, blue cheese, Camembert)
2 eggs
salt
ground pepper
herbs (lovage, parsley, to taste)
breadcrumbs for dusting the baking dish
fat for greasing the baking dish

Recipe steps

Grease a baking dish with fat and sprinkle with breadcrumbs. Peel the onion and chop it into small cubes along with the bacon. Peel and finely chop the garlic. Also chop the dried tomatoes into small pieces.

Break the cauliflower into larger pieces and boil for about 15 minutes in salted water, then let it cool slightly and drain. After a while, roughly mash it with a potato masher.

In some fat, sauté the bacon and onion, lower the heat, add the garlic and dried tomatoes, sauté briefly and then mix with the mashed cauliflower.

In the remaining oil, make a roux from the flour, pour it with milk, and cook for about 5 minutes. After it cools a bit, add grated or chopped cheese. Let the cheese melt and then stir in the cheese béchamel. Pour the resulting mixture into the cauliflower with onion and bacon.

Whisk two eggs into a foam and gently mix them with the cauliflower. Season with salt, pepper, and optionally add herbs (such as lovage or parsley). Then pour the entire mixture into the baking dish.

Bake for about 30 minutes at 180°C. It also tastes very good cold with pickles or vegetable salad.
