175 g brown sugar
175 ml oil
3 eggs
140 g grated carrot
100 g raisins (or more carrots instead)
1 large orange
175 g all-purpose flour
1.5 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
a pinch of cardamom
0.5 tsp grated nutmeg
Frosting (optional)
175 g powdered sugar
a little orange juice
Recipe steps
Preheat the oven to 180 °C. Grease a 24 cm diameter cake tin with oil and sprinkle with coconut.
Pour the sugar into a large bowl, add the oil, and gradually add the eggs. Mix everything thoroughly, then fold in the grated carrots, raisins, and orange zest.
Take another bowl and mix all the dry ingredients for the cake in it, which we then add to the carrot mixture. Mix thoroughly and pour into the tin. Bake for 40 to 45 minutes.
Allow the cake to cool for 5 minutes, then remove it from the oven. We can decorate it with a frosting made by mixing powdered sugar with orange juice and spread it on the cake.
Then drizzle it with chocolate or spread whipped cream on it. Finally, cut it into pieces and spread with jam or fruit spread.
