Baked Eggplant

We thoroughly wash the eggplant, cut it in half, scoop out the inside (leaving about 1 cm from the edge), salt it, pepper it, brush it with oil, and place it in the oven to bake.

1 eggplant
3 tomatoes
1 red bell pepper
1/2 small zucchini
1 onion
1 fresh basil
2 cloves of garlic
mozzarella
1 cup of couscous
vegetable broth (for soaking the couscous, if not available, use water)

Wash the eggplant thoroughly, cut it in half, and scoop out the flesh, leaving about 1 cm around the edge. Salt, pepper, brush with oil, and bake in the oven for 15 minutes at a temperature of 200 degrees.
Meanwhile, heat a little olive oil in a pan, sauté diced onion, bell pepper, tomatoes, garlic, zucchini, and the scooped-out part of the eggplant, and stir-fry.
Place the couscous in a cup and pour in two cups of broth. Let the water be absorbed, and then add the mixture to the pan and mix thoroughly.
Fill the eggplants with the mixture, place slices of mozzarella on top, and bake in the oven at a temperature of 180 degrees for 15 minutes.
After removing the dish, sprinkle with chopped basil and serve.
