Alevropita

Alevropita, or Epiran Feta Tart, is an egg omelette in the style of a savory pie. It is very easy to prepare, and the base is, of course, eggs and cheese layered with butter.

2 tablespoons melted butter
2 cups milk
1 ricotta
1 feta cheese
oregano
thyme
chilli
phyllo dough (similar to puff pastry)

Preheat the oven and place a sheet of phyllo on a baking tray. Whisk the eggs, milk, ricotta, and feta into a thick mixture. Add the remaining ingredients and layer them on the dough. Cover with another sheet of dough, drizzle with egg, and bake.
