Ingredients (what you need)

700 ml parboiled rice (yes ml, measure in a measuring cup)
500 g frozen vegetables (peas, carrots, corn)
30 g Judas's ear mushrooms
1 handful of dried mushrooms (if you don't have any, it's okay)
1 larger onion
vegetable bouillon for 750 ml of water
pepper, salt
turmeric, chili

Recipe steps

We mix all the dried mushrooms and pour boiling water over them, at least 1 liter, so that the mushrooms are fully submerged even after soaking in water. We let them sit in this water for one hour. We do not throw away the water!

We put the rice in a pot and add 770 ml of water, which is 10% more than the volume of the rice (for 500 ml of rice we would need 550 ml of water). We cover it with a lid, salt it, and cook it just like sushi rice, meaning 9 minutes on the lowest heat after it reaches a boil, then we increase the heat to medium and cook for another 4 minutes. After that, we turn off the stove and let the rice sit covered for another 15 minutes. It is important that the rice remains covered throughout the process!

Before the rice is ready, we prepare the mixture of vegetables and mushrooms. In hot oil, we quickly sauté the chopped onion. Then we add all the vegetables, chopped mushrooms, spices, and broth. We add a bit of water and simmer for 15 minutes. Finally, we mix everything thoroughly.
