Ingredients (what you need)

4 trout
4 slices of English bacon
mushrooms
1 onion
butter
oil
salt
ground pepper
sweet ground paprika
crushed caraway seeds
2 tablespoons of lovage
2 tablespoons of curly parsley
plain flour for coating

Recipe steps

First, we thaw the trout, wash them well, dry them, and then salt them.

We slice the onion, garlic, and mushrooms. If we do not have fresh mushrooms, we can use canned mushrooms in brine, for example.

In butter, we sauté the onion with the garlic, then add the mushrooms and quickly fry them. Finally, we stir in the chopped parsley and lovage. We season with crushed caraway seeds, ground pepper, a pinch of paprika, and salt. If we are using pickled mushrooms, we do not add salt. We mix everything thoroughly and let it cool.

We stuff the prepared trout for cooking with a slice of bacon and the cooled mushroom mixture. To prevent them from sticking to the pan, we coat them in all-purpose flour just before baking.

We immediately place them in the pan and fry on both sides until the crust is perfectly crispy.

We serve with roasted potatoes.
