Ingredients (what you need)
1 kg potatoes
2 teaspoons mustard
3 teaspoons sugar
5 pickled cucumbers
1 larger apple
1 onion
100 ml cucumber brine
100 ml oil
2-3 tablespoons vinegar
salt (to taste)
ground pepper (to taste)
10 leaves of wild garlic (or chives)
Recipe steps
We wash the potatoes and boil them with the skin on.
We peel the onion and cut it into small cubes.
We peel the apple and cut it into small pieces, and we also dice the cucumber.
We mix the cucumber brine with oil, onion, and mustard, and add a little vinegar to taste.
We peel the cooked potatoes, ideally while they are still warm, and cut them into three parts.
In a larger bowl, we place one-third of the hot sliced potatoes, add the cucumbers, and drizzle a little dressing over everything.
We season lightly with salt and pepper.
For the second third of the potatoes, we slice them, sprinkle with apples, lightly salt, pepper, and drizzle a little dressing.
We place the last third of the sliced potatoes on top of the apples and drizzle the remaining dressing over them. We do not mix.
We should let the salad sit for about 4 hours, ideally overnight.
Before serving, we chop the wild garlic, sprinkle it over the salad, and mix thoroughly. We can use chives instead of wild garlic.
