Ingredients (what you need)

5 pcs spring onion
4 handfuls leaf lettuce - various types
3 cloves quality garlic
lemon juice
1 handful mint
white pepper - ground
salt
caraway - ground
olive oil
1 handful parsley or other herb
350 - 400 ml broth - vegetable
2 - 3 pcs chili peppers (fresh)
150 g couscous
6 - 8 pcs cherry tomatoes

Recipe steps

A salad with vegetables and couscous can be a good choice.

We will go buy quality vegetables and wash them thoroughly at home. We will chop them on a cutting board. We will finely chop the herbs in a hand mixer.

In a pot, we pour a little oil and add chopped garlic. We add chili peppers (without seeds). We sprinkle in the spring onion. We lightly sauté everything. Now it’s time for the vegetable broth that we prepared earlier. We let it simmer. We take the couscous and carefully pour it into the pot. We turn off the stove. We stir and let it rest.

Separately, we will make a dressing for the salad.

We mix lemon juice and olive oil. We set it aside.

We prepare a deep bowl (I use a glass one). We put in mint, parsley (or other herbs, e.g., basil). We tear up the lettuce leaves (the types depend on you) and add them to the bowl. We sprinkle in the chopped tomatoes. We add the couscous. We stir. We pour in the salad dressing. We season. We gently stir everything again and we can serve.
