800 g potatoes
10 g salt
1-2 eggs (depending on size)
100 g semolina
200 g coarse flour
2 tablespoons vinegar
Filling

Recipe steps
Thoroughly rinse the potatoes, cook them the day before, and let them cool overnight in their skins.
The next day, peel the potatoes and grate them finely or mash them. Sprinkle flour and semolina on the work surface and add salt. Make a well in the center, into which we add the beaten egg and vinegar.
First, use a knife and then your hands to work the dough, which should be firm and well-kneaded. We should not leave the dough too long, as it will become too soft.
From the dough, we form a roll, cut it into pieces, slightly flatten them, and fill them with fruit or fruit preserves. Carefully seal the dumplings and round them in your hands.
Cook the dumplings in salted boiling water, allowing them to simmer slowly for about 10-15 minutes, depending on their size. After a while, gently lift them with a spoon so they do not stick to the bottom.
Serve the dumplings dusted with powdered sugar, breadcrumbs toasted in butter, ground poppy seeds, or grated gingerbread, and drizzle with melted butter.
