Juicy herb chicken roasted on coarse salt
We thoroughly wash and dry the chicken. We season it with fine salt, as is customary, both outside and inside. Inside the cavity, we place a piece of butter and herbs to taste.
Ingredients (what you need)
chicken (1000-1100 g)
750-1000 g coarse salt
thin slice of butter
Fresh herbs
rosemary
basil
marjoram
mint
oregano (choose your favorites)
2 tablespoons of oil
a pinch of sweet red pepper
Recipe steps
First, wash and dry the chicken. Salt it with fine salt inside and out. Place a piece of butter and herbs of your choice inside the chicken. I used a sprig of rosemary and a few leaves of marjoram and basil.
Evenly sprinkle coarse salt on the roasting pan, place the chicken on top, and lightly cover it with aluminum foil. Bake at 180 degrees for about half an hour. Then remove the foil, brush the chicken with oil and paprika, and bake for another 30-40 minutes.
Gradually baste it. In the last 10 minutes, increase the temperature and finish roasting the chicken until it is crispy.
