Ingredients (what you need)
500 g short-grain rice
2 tablespoons olive oil
200 ml dry white wine
1 liter strong broth (can be from a cube)
1 onion
3 cloves garlic
sun-dried tomatoes in oil
butter
1 handful chopped parsley
120 g parmesan (a handful for sprinkling)
salt
ground pepper
Recipe steps
First, we will make a broth that we will keep warm throughout the preparation.
In a pan, heat olive oil, then add finely chopped onion and garlic, and sauté them over low heat.
Add the rice and stir constantly until all the grains become transparent.
Add the wine and keep stirring. The stirring will last about 20 minutes, during which we let the wine absorb into the rice.
Add a ladle of broth, reduce the heat, and season with salt and pepper. Continue stirring and let the liquid absorb and evaporate again.
Next, add another ladle of broth and continue this process until we have used all the broth and the rice is "al dente." If we run out of broth before the rice is soft enough, we can add a bit of hot water (this is why it's good to have it prepared in a kettle).
Remove the cooked risotto from the heat and add butter, chopped parsley, and half of the grated Parmesan cheese. Mix everything thoroughly and let it sit covered for about 2 minutes to allow the flavors to meld.
To taste, add salt or lemon juice and mix it with the drained and chopped sun-dried tomatoes. Serve topped with the remaining grated Parmesan cheese.
