Homemade yeast dumplings

Goulash without dumplings is like it wasn't there. Dumplings - pork - sauerkraut likewise. Dumplings simply belong to certain dishes. And how to prepare such dumplings?
Ingredients (what you need)
2 pcs rolls from the day before
1 teaspoon of granulated sugar
approximately 500 ml semi-skimmed milk
1 kg semi-coarse flour
2 pcs eggs
20 g yeast
20 g salt
a little butter
Recipe steps
First, we will prepare the yeast starter. Pour 100 ml of lukewarm milk into a small bowl. Crumble the yeast and add it along with the sugar to the bowl.
Cover it with a kitchen towel and place it in a warm spot to rise.
In a pan, put the chopped rolls with a little butter and sauté them. Remove from heat and set aside.
In a large bowl, pour in the flour, add the eggs, the risen yeast starter, and salt. Pour in the warm milk, add the sautéed rolls, and mix and knead thoroughly.
Now the dough will rest and rise for about one hour. But first, we need to sprinkle it with a little flour and cover it with a kitchen towel.
After an hour, we will knead the dough again on a floured surface,
form about 4 dumplings and let them rest for another 15 minutes.
Boil water and lightly salt it. Place the dumplings in the water and cook. At the beginning, watch them so they don’t stick to the bottom. Cook for about 20 minutes. About halfway through, turn them over with a wooden spoon. Since the dumplings will rise while cooking, I recommend cooking a maximum of two at a time.
Finally, we take them out and immediately pierce them from both sides on a cutting board. Cut using thread and serve as a side dish to a good meat dish.
