First, we prepare a roux from melted butter and flour. Then we add cold water to it. We stir and cook for about 10 minutes. We clean and cut the broccoli into florets. We add it to our water with the roux, season with salt, and cook until tender.

Ingredients (what you need)

1.25 l water
100 ml cream
1 tablespoon all-purpose flour
1 piece broccoli
1 tablespoon butter
1 pinch grated nutmeg
1 pinch ground pepper
to taste seasoning
parsley
salt

Recipe steps

We remove the soup from the heat, let it cool for a while, and then blend it with an immersion blender. We add cream to soften it and season it. We stir the soup again and warm it up.

We then serve it garnished with parsley.
