Ingredients (what you need)
200 g dried chickpeas
100 g soy granules
2 tablespoons mustard
2 tablespoons nutritional yeast
Himalayan salt (ordinary salt can also be used)
cumin
oregano
spring onion greens
Recipe steps
I soaked the chickpeas the day before.
Then I cooked them in fresh water for 45 minutes.
I cooked the soy by adding nutritional yeast, mustard, and salt to a liter of water. Once the water started to boil, I added the soy granules and cooked them for 15 minutes.
After draining the water, I squeezed out the excess water from the granules using a spoon in a colander. I chopped the green onion tops and added them to the bowl along with soy sauce. I seasoned the mixture with cumin, marjoram, and salt. If desired, crushed garlic can also be added.
I mixed in the cooked chickpeas, which I blended into a smooth paste.
The green onion tops added flavor to the mixture during blending, but I left larger pieces. And that's the finished mixture.
We can either bake this as a loaf or use it to fill various kinds of vegetables, such as eggplant, zucchini, tomatoes, mushrooms, peppers, or cabbage leaves.
