Chicken curry

Ingredients (what you need)
4 pieces chicken breast fillets
2.5 teaspoons curry powder
2 tablespoons sunflower oil
1/2 teaspoon freshly ground black pepper
1 small onion, finely chopped
400 ml coconut milk
3 cm fresh peeled ginger
4 cloves garlic
150 g fresh baby spinach
a handful of coarsely chopped roasted peanuts
salt
Recipe steps
First, prepare the meat. Cut the washed and dried chicken breast fillets into 2-centimeter pieces. Season them with salt, ground pepper, and curry powder.
In a bowl, blend the coconut milk, garlic, and ginger until smooth.
In a larger pan, sauté the finely chopped onion until translucent. Add the meat with the spices and quickly stir-fry. Then pour in the coconut milk and let it simmer gently for 7-10 minutes.
About one minute before finishing, add spinach to the pan.
You can serve it with roasted peanuts, rice, or flatbread.
