3.6 kg turkey

Stuffing
100 g butter
100 g chicken or pork liver
250 g chestnuts
4 eggs
500 g minced meat
for seasoning salt
nutmeg
almonds
breadcrumbs

For the potatoes
600 g potatoes according to diners
1 spring onion
2 carrots
200 ml cream
250 g cabbage
salt
pepper

Recipe steps

Cook the chestnuts in milk until soft, then peel them warm and grind them. Mix the butter with salt and the flower, gradually add the yolks, meat, ground liver, chestnuts, beaten egg whites, a little breadcrumbs, and almonds. Fill the turkey with this mixture, including under the skin, season with salt and sprinkle with poultry seasoning, dot with butter, and place in the oven to roast.

Boil the potatoes with carrots, as well as the cabbage. Then, bring the cream with chopped onion to a boil. Mash the cooked potatoes with carrots, add the cabbage, pour in the cream, and mix well. Finally, taste for seasoning.
