300 ml broth
salt
ground pepper
oil
Thickener
2-3 tablespoons all-purpose flour

Slice the beef, making incisions on the edges in several places, and gently pound it on both sides. Season with salt and pepper, and brush with mustard on both sides.
Remove the skin from the onion and chop it into small pieces. In a pot, heat the oil and sauté the onion until translucent, then add the meat and briefly sear it.
Then add the broth and cook covered until the meat is tender, which takes about an hour. Add water as needed.
Prepare a dough from all-purpose flour and water. Once the meat is tender, remove it from the pot and set it aside.
