Beef cheeks with carrot sauce

We wash the cheeks, dry them, and lightly score the sides. We season them with salt and pepper on both sides, and then we quickly sear them in a pressure cooker on both sides.

Ingredients (what you need)

4 pieces of beef cheeks
2 tablespoons of oil
1 onion
3 cloves of garlic
2 larger carrots
200 ml of broth
200 ml of carrot juice
ground pepper
salt
Furthermore
1 cm thick slice of butter
1 teaspoon of oil
1 larger carrot
5 tablespoons of broth
juice from ½ lime

Recipe steps

First, rinse the cheeks and dry them, then make slight cuts on the sides. Season them with salt and pepper on both sides and sear them in a pressure cooker. After searing, set them aside and add finely chopped onion and garlic slices to the pot, which we will sauté.

Pour broth and carrot juice over the base. Add the cheeks back to the pot, then sprinkle in the chopped carrot and cover the pot with a lid. Once it reaches a boil, cook under pressure on low heat for 40 minutes.

Meanwhile, cut one carrot into small cubes and sauté it in heated butter mixed with oil for five minutes. Then add five tablespoons of broth, lime juice, a pinch of salt, and cover to simmer for another 8 to 10 minutes.

Remove the pressure lid from the pot, take out the tender meat, and blend the sauce until smooth using an immersion blender. Add the stewed carrot, meat, and heat through. Boiled potatoes can be served as a side dish.
