Bacon dumplings

Dumplings usually serve as a side dish but can also be a main course. This is true for bacon dumplings, which we prepare from boiled pork belly.
Ingredients (what you need)
200 g smoked pork belly
400 g stale rolls (preferably from the previous day)
150 g coarse flour
salt
ground pepper
2 smaller eggs
1 pinch of nutmeg
a few sprigs of parsley (or 1/2 teaspoon dried)
300 ml milk
Recipe steps
We cook the pork belly in a pressure cooker until tender.
We remove any bones and cut the meat into small cubes.
We cut the stale bread into small cubes. We mix it with the meat, place it in a baking dish, and bake in the oven, stirring occasionally, until golden brown.
In a bowl, we pour in the flour, season it with salt, add pepper and nutmeg, then add finely chopped parsley and eggs whisked with milk.
We mix the mixture thoroughly, then add the toasted bread with pork belly and combine everything well to form a thick mass.
Using a spoon, we cut off larger pieces, shape them into round forms by hand, and place them in boiling salted water. We cook them for 12 to 15 minutes, depending on their size.
We remove the cooked dumplings with a slotted spoon, cut them open, and spread them with lard or crispy bacon, then serve them with stewed cabbage and fried onion rings.
