Summer potato salad

Ingredients (what you need)
800 g new potatoes
1 salad cucumber
100 g leek
2 tablespoons olive oil
1 tablespoon whole grain mustard (or other)
salt
ground pepper
lemon juice (or balsamic vinegar)
Recipe steps
We cook the potatoes with their skins on.
Once cooled, we peel them and cut them into slices.
We thoroughly wash the cucumber and cut it into rings, and the leek into half-moons.
In a bowl, we mix the potatoes with the cucumber and leek, and dress everything with a dressing of mustard, oil, and lemon juice. We season with salt and pepper to taste.
