First, we bake the beets. We wrap the washed bulbs individually in aluminum foil and bake for about 60 - 80 minutes. It is best to bake them at the same time as the meat in another baking dish. (It is advantageous to bake more pieces, as they will last several days in the fridge and can be used for salads and similar dishes.)
Grate the cooked eggs and the cooled, peeled beets on a grater with a tear-shaped design.
Season with salt and pepper, add mustard to taste, and mix with cream. Then let it rest in the cold.
