We clean the meat of fat and membranes, gently pound it, season it with salt and pepper. Then we place it on a portion of well-heated lard and sear it quickly on all sides.

1 kg well-aged beef brisket
100 g lard
50 g butter
ground pepper
broth
salt

Recipe steps

We clean the meat of fat and silverskin, slightly pound it, season it with salt and pepper. Then we place it in well-heated lard and sear it vigorously on all sides.

We pour in the remaining lard and place it in a well-heated oven at 220-250 °C. We add a little liquid and roast for about 25-35 minutes, occasionally basting it with the meat juices. We check that no bloody juices are leaking from the meat.

We brush the meat with butter to give it a nice color and sheen, and then we finish roasting it. It is important not to overdo it, otherwise the meat would dry out.

If we want to serve the roast beef warm, we slice it thinly ten minutes after taking it out of the oven.
