Cut the chicken into thin strips. Add the spice mixture (to taste), olive oil, and refrigerate for one hour to marinate.

Ingredients (what you need)

1 kg boneless chicken thighs
olive oil

Shawarma spice mix in the ratio
2 teaspoons curry
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon dried garlic
1 teaspoon turmeric
1/2 teaspoon sweet paprika
1/2 teaspoon pepper
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
salt

Mango sauce
mango
garlic
chili
sugar
salt
water

Tahini sauce
tahini paste (unflavored sesame paste; can be purchased at supermarkets)
water
salt
lemon juice

When serving
Arabic pita bread
sliced tomatoes
sliced salad cucumber
sliced pickles

cabbage salad
sliced onions

Recipe steps

Cut the chicken meat into very thin strips. Add mixed spices to taste, olive oil, and let it marinate in a cool place for one hour. Then take it out and leave it at room temperature for another half hour. Quickly sauté the chicken mixture while stirring constantly, and finally add salt.

Peel the mango, cut it into pieces, and cook it in a small amount of water. After it cools down, blend it with spices (you can also buy ready-made mango sauce in the store).

Mix tahini paste with cold water, salt, and lemon juice. After the first addition of water, the paste will thicken, and as we add more water, it will become thinner (about 6 tablespoons of water is sufficient). We shouldn't dilute it too much; it should have a somewhat paste-like consistency. More salt and lemon juice will be needed to make the paste tastier, and the exact amount depends on personal taste. Serve the shawarma in Arabic bread, which is further filled with vegetables, salads, and flavored with tahini and mango sauce.
