Summer potato salad with pickled canned vegetables and apples

Peel the potatoes and boil them until soft, but not too soft. Once cooled, pass them through a ricer into small pieces. Then add the vegetables...
Ingredients (what you need)
1000 g new potatoes
1 Moravanka (pickled sterilized vegetables with onion)
2-3 smaller tomatoes
a few teaspoons of Dijon mustard
salt
pepper
flat-leaf parsley
olive oil for drizzling
1 small apple
Recipe steps
Peeled potatoes are boiled until they are semi-soft, but not too soft. After cooling, they are passed through a grid into small cubes. We add vegetables, cherry tomatoes, mustard, herbs, olive oil, and a little brine from Moravanka. We do not add mayonnaise or sour cream to the salad.
We take the onion from the Moravanka brine, chop it, and add diced apple. Everything is thoroughly mixed and left in the cool until the next day - that is, overnight. It can be served with meat or just as is. In summer, it's also great as a snack by the water.
